Ova kiselost mo\u017ee utjecati na ravnote\u017eu pH u receptu, \u0161to mo\u017ee uzrokovati da kola\u010di budu manje prozra\u010dni i mekani.<br \/>\nSoda bikarbona, koja je alkalna, poma\u017ee neutralizirati tu kiselost, stvaraju\u0107i bolje uvjete za dizanje tijesta.<br \/>\nDodajte dobar prstohvat sode bikarbone kako biste neutralizirali kiselost meda, osobito u pe\u010denim proizvodima.<br \/>\nOvo pravilo vrijedi samo za recepte koji ne sadr\u017ee pra\u0161ak za pecivo ili ve\u0107 uklju\u010duju sodu bikarbonu. Ako recept ve\u0107 ima pra\u0161ak za pecivo, dodatna soda mo\u017eda ne\u0107e biti potrebna jer pra\u0161ak za pecivo ima vlastite kiseline i lu\u017eine koje balansiraju smjesu.<\/p>\n<p>Ukratko, soda bikarbona poma\u017ee va\u0161im pecivima da budu prozra\u010dnija, bolje teksture i ugodnijeg okusa kad koristite med. \ud83d\ude0a<\/p>\n<p>&nbsp;<\/p>\n<ul>\n<li>\n<h5>Temperatura pe\u010denja<\/h5>\n<\/li>\n<\/ul>\n<p>Med br\u017ee karamelizira nego \u0161e\u0107er, pa smanjite temperaturu pe\u010denja za 10-15\u00b0C kako biste izbjegli prekomjerno tamnjenje.<\/p>\n<p>Med sadr\u017ei glukozu i fruktozu, koji karameliziraju na ni\u017eim temperaturama (oko 110\u2013120\u00b0C) u usporedbi sa saharozom iz \u0161e\u0107era, koja po\u010dinje karamelizirati tek iznad 160\u00b0C. Mo\u017ee vam se dogoditi da kola\u010di, keksi ili kruh mogu izgledati gotovi izvana, ali ostati nedovoljno pe\u010deni iznutra.<br \/>\nSmanjivanjem temperature omogu\u0107it \u0107ete sporije i ravnomjernije pe\u010denje, sprje\u010davaju\u0107i tamnjenje povr\u0161ine prije nego \u0161to unutra\u0161njost bude potpuno pe\u010dena.<\/p>\n<p>Pratite i vrijeme pe\u010denja!\u00a0 Zbog razli\u010dite kemije meda, mo\u017ee biti potrebno i malo skratiti ukupno vrijeme pe\u010denja (provjerite 5-10 minuta ranije).<br \/>\nKoristite papir za pe\u010denje ili foliju. Ako primijetite da povr\u0161ina kola\u010da tamni prebrzo, prekrijte ga aluminijskom folijom tijekom zadnjih 10 minuta pe\u010denja.<\/p>\n<p>Prilagodba temperature i pra\u0107enje pe\u010denja osiguravaju da va\u0161a slastice budu savr\u0161eno pe\u010dene i jednako ukusne s medom kao \u0161to bi bile sa \u0161e\u0107erom! \ud83d\ude0a<\/p>\n<p>Nadam se da vam ovo sve ne zvu\u010di prekomplicirano &#8211; jer zaista nije.
